  • 50g protein
  • 56g Carbs

  • 1 cup cooked rice (white or brown)
  • 600g raw cubed chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 can of black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese

For Salsa:

  • 1 tablespoon chopped fresh cilantro
  • ½ cup chopped tomato
  • ½ cup chopped onion
  • 2 tablespoons white vinegar
  • 4 tablespoons lime juice 
  • ⅛ teaspoon kosher salt

How To Cook:

  • Using your large skillet, add the olive oil and heat to medium-high. Drop the chicken cube in the skillet and season them with chili powder, cumin, salt, pepper and mix them well. Cook till the chicken is done and the color turning from pink to light golden brown which takes about 6-8 minutes.
  • The next step is to start preparing the rice if it isn’t done yet.
  • When the chicken is done, transfer it to a plate and save it for later. In the same skillet add diced onion and bell pepper. Cook until softened, about 5 minutes.
  • After that add black beans, corn, chili powder, cumin, paprika, salt, and pepper to the skillet. Cook for another 5 minutes, stirring occasionally.
  • To make the burrito bowls let’s divide the precooked rice into the bowls for serving. In the bowls, layer the cooked rice. Top each bowl with the cooked chicken, bean mixture, sliced avocado, diced tomato, shredded cheese, and chopped cilantro.
  • For Salsa add all salsa ingredients to a bowl and mix well until combined.
